chuao chocolate has been tested by independent, state-certified laboratories for lead and cadmium. our chocolate tested below california's maximum allowable dose level (madl) for lead (max allowed is 0.5 micrograms) and cadmium (max allowed is 4.1 micrograms). california levels are used because scientists believe they are the most protective available.
lead and cadmium are naturally occurring in cocoa solids. researchers have found that cacao plants absorb cadmium from the soil, with lead accumulating in cacao beans as the tree grows. because dark chocolate typically uses more cocoa solids than milk chocolate, lead and cadmium may be more prevalent in dark chocolates, especially those exceeding 70%.
